What about InDesign? This program has the ability to do everything PhotoShop does and more. It's like having QuarkExpress, Adobe illustrator and PhotoShop all in one.... Oh wait sorry.... that's actually NOT an easier program. It's actually quite similar but with more features. I would NOT recommend this program unless you are at least proficient or advanced in PhotoShop and those other programs.
I personally like the gimp, which is available for both windows and Linux. However, with tinkering it can be installed on Mac. I believe with some special client. Information link: http://www.macgimp.org/
